Tofu with Black Bean Sauce at Blue Koi

The Blue Koi's tofu with black-bean sauce is so succulent that some vegetarians will have to double-check to make sure it's not chicken. No, it's not. The tofu really is that good. Crispy on the outside and tender on the inside, the tofu is glazed with a tangy black bean sauce. Served on a bed of rice, the tender little pillows of nonmeat are stir-fried with red and green bell peppers and thin rings of jalapeño, adding a slight spiciness to counteract the sweet sauce.
