The rice noodle rolls are like the starter's gun for Sunday dim sum at Bo Lings on the Plaza. Moments after you sit down, the food carts arrive. Your meal is ready to begin. Keep your fingers crossed that the dim sum staple of rice noodle rolls are in warming dishes on that first cart.
The steamed rice noodle rolls (Chee Cheong Fun) are tender pillows filled with shrimp, pork or beef. The noodles are slightly transparent and lightly scored to let you know which filling is inside. The man or woman behind the cart can also take away the guess work for you.
Never greasy, this is the dish that can change people's perceptions of dim sum and be an easy introduction for the uninitiated. The traditional Cantonese rolls are served with a sweet, dark soy sauce, although the noodles also go well with the hot mustard or soy sauce that is on your table.
The three noodle rolls will also be gone before you know it. But by that time, you'll already have three or four more small plates to enjoy.
