Pigwich, Local Pig's sandwich shop, set to open this weekend

Alex Pope is getting back to designing dishes...in sandwich form.
At Local Pig, you can see where the sausage is made. Then you can go ahead and ask them to slap some meat between two slices of bread. Pigwich, the new sandwich trailer from the Local Pig (2618 Guinotte Avenue) in the East Bottoms, opens officially tomorrow. Vegetarians are welcome - a falafel sandwich is a daily choice on the menu.

"We're excited to have food service," says co-owner Alex Pope. "Since the day we've opened, people have been asking for us to do it."

The sandwich enterprise is open daily from 10:30 a.m. to 7 p.m. Diners have the option of taking their sandwich to go or sitting down in the backyard patio that seats 40 people. The full menu is after the jump.

Six months ago, Pope found a former fried chicken truck in Evansville, Indiana. After some heavy duty clean-up (Pope estimates the truck had 40 square feet of deep fryers), the truck opened quietly in the middle of this week. The early top sellers have been the cheesesteaks and the banh mi. The sandwiches are all $7, a side of housemade chips and a canned soda (Coke, Diet Coke, Sprite or water) bump it up to $8, tax included.

"Everything is made here. We do all the meats, sauces and pickles. And then we put it all on Farm to Market bread," says Pope. "We just want to make good food for lunch and we don't want to price out our neighbors."

For Pope, it's a chance to get back to his roots as a chef. He's been doing regular pop-ups with Vagabond, but hasn't had his own kitchen since moving on from R Bar in the West Bottoms.

"We did almost 100 covers yesterday," Pope said during a phone call from his shop this morning. "It was an adrenaline rush. I'm happy to be back."
