Some of the finest smoke in Blue Springs, Missouri, is in the parking lot of a cigar shop. A hand-lettered white sign that says "BBQ" and has a red arrow will point you to Three Pigs BBQ, which is regularly parked in the lot outside the Cigar Merchant at 809 N.W. Highway 7 (the corner of Highway 7 and N.W. Mock Avenue). If it's not raining, you can just roll down your windows and let the hickory and oak smoke guide you to the red trailer with a black-and-white checkered awning.

I had every intention of driving down Highway 7 and not stopping. But in the midst of all the fast-food joints and banks, there was a culinary stop sign: a bright-red food truck. The brisket sandwich from Three Pigs BBQ came with piles of competition-tender meat. And as with all good barbecue, the sauce and beans (which have a healthy amount of brown sugar or molasses) grew on me the longer I ate them. It was a lunch that outstripped its circumstances. It's a good sandwich at a reasonable price.
A sandwich with a side will run you $6.50. If you want to double the meat from 1/3 pound to 2/3 pound, that same combo will run you $9, as will a burnt ends sandwich. You can add a rib or a can of soda for $1. Three Pigs BBQ is open Wednesday through Sunday.
