The Fast Pitch will award the book to the first contestant to correctly figure out which single ingredient in this recipe for "Red Wine Marinade" (the unadulterated recipe for which is featured in the book) is not supposed to be there. The altered recipe follows after the jump.
RED WINE MARINADE
3/4 cup dry red wine
1/4 cup balsamic vinegar
3 tbsp. extra virgin olive oil
2 tbsp. mild-flavored (light) molasses
2 tbsp. chopped fresh thyme (or 2 tsp. dried)
1 tbsp. crushed juniper berries or 2 tbsp. gin
3 large garlic cloves, minced
3 2x1 strips orange peel
3 2x1 strips lemon peel
8 whole cloves
1/4 tsp. cayenne pepper
8 whole black peppercorns
2 Bay leaves, broken in half
3/4 tsp. kosher salt
Mix all ingredients in a medium bowl. (Can be made 2 days ahead). Cover, chill.
To use with beef, lamb or chicken: Marinate meat for 6-12 hours or poultry for 2-4 hours in the refrigerator. Drain marinade into a saucepan. Boil for one minute. Pat meat or poultry dry. Grill, basting occasionally with marinade.
