The Drop is a tiny saloon with ambitions of being a neighborhood bistro. Its already halfway there; owners Ernesto Peralta and Eddie Crane — two former Capital Grille bartenders — have hired talented young chef Josh Eans to oversee the droplet-sized kitchen. Lacking a fully equipped kitchen, Eans creates an impressive collection of starters, salads and sandwiches using an array of unexpected ingredients: toasted pistachios, smoked salmon, pancetta, candied beets. He doesnt serve entrées, relying instead on tasty tapas-style fare to accompany drinking and flirting. Joshs wife, pastry chef Abby Jo Eans, whips up a few dazzling small desserts that are almost as lyrical as the 10,000 musical choices on The Drops video jukebox. - Charles Ferruzza
