The guys at Happy Gillis are pleasers. One morning, when we couldn't choose between bacon and sausage for our "American Breakfast Sandwich," the men in the small open kitchen behind the cash register happily made, for a little extra dough, a monstrous sandwich stuffed with crisp slices of bacon, plump sausage-link halves, fluffy scrambled eggs and melted cheese on toasted wheat bread. It crushed the standard breakfast sandwich, making an Egg McMuffin look like a minuscule morsel by comparison. Todd Schulte opened Happy Gillis with his wife, Tracy Zinn, early this year. With its slightly kitschy wall hangings and a loungey couch area complementing a handful of tables, their sunny, homey corner-storefront spot in Columbus Park has won our hearts. That goes for days when we don't need a monster breakfast but just want to hang out with friends and a cup of coffee, too. Why not start the day at a place called Happy?
