The Missouri State Fair is in full swing (the last day is August 23), but driving to Sedalia isn't on the top of your list.
So get inspired by The Kitchn's State Fair Food Week, and take that gas money and apply it towards a deep fat fryer. It's time to recreate the state fair experience in your kitchen. The beauty of the recipes below is that even when you screw up, the fat content is so high they are still likely to taste pretty good.
The heart of fair food lies in the dessert mixture of salty and sweet
-- fried candy and baked goods. In principle it's not that different from
making corn dogs, but an improperly coated dessert will lead to oily
mush instead of greasy bliss. One way to avoid a misstep is to use funnel cake batter to coat your frozen candy bar or Twinkie.
The greatest challenge is
cotton candy. Any recipe that involves wire cutters and a slit garbage bag should be approached with caution. You can also always rent or buy your own cotton candy machine. And since Sunday was National Rum Day, here's a cotton candy cocktail that has a rum base.
As for the rest of the fair experience, it's best to leave the livestock judging and Tilt-A-Whirl to the professionals.
