Los Cabos -- the twelfth restaurant from KC Hopps -- opened last Monday in Mission Farms. Today it debuts a new menu with several additional seafood and vegetarian items.

"We look at every concept and decide if it's something we can do well," says Chris Sutton, CEO of KC Hopps. "In this case, we felt like we had the talent to put our mark on the location in Mission Farms."

The restaurant at 10551 Mission Road seats 268 people with two private dining rooms available -- and what Sutton believes is "the best patio in Johnson County," thanks to two fire pits.

"I can't wait for the Fourth of July -- we look out directly on where they shoot off the fireworks in Leawood," says General Manager Marco Diaz.

With a bar straight out of a beach resort and a dining room awash in cool orange and red tones, the restaurant looks completely different from the previous tenant, the Cajun-styled Boudreaux's Lousiana Seafood & Steaks. And Diaz, formerly of Nara and Baja 600, has been excited by the response in the first week.
"I love being in this neighborhood. This is a neighborhood restaurant and it really feels like all our neighbors want us to succeed," he says.

Los Cabos opens a year after its sister restaurant debuted at the Legends, in the site that was formerly the Corona Cantina. As such, it's not an entirely new restaurant concept for the locally owned chain, and that means the drink and food menus are a bit more ambitious than you might see in a first-time venture.

"That thing that makes us a bit unique is that we are not traditional -- we have a braised short rib served with mole sauce and a chipotle, honey-glazed salmon dish," says Sutton.

Starters include items such as poblano chile relleno (fire-roasted poblano pepper stuffed with chorizo and a three-cheese blend with a sweet and spicy tomato sauce, $5.99), ancho chile shrimp  jumbo shrimp sauteed and served with Boniato shoestring fries and garlic-ancho pan sauce, $6.99) and tableside guacamole ($9.99).
Fajitas Especiales -- grilled steak ($11.99), chicken ($10.99) or shrimp ($13.99) with sauteed bell peppers, onions and warm flour tortillas.

Daily fish deliveries result in a number of seafood options including Tequila Shrimp Tacos ($11.99) and Fresh Fish Tacos made with a seasonal white fish, available as sauteed or lightly breaded and fried, seved with a chipotle-lime creme fraiche, citrus slaw and pico de gallo.

The menu lists 50 tequilas (including Cabo Wabo, Patron, Milagro and Tesoro Paridiso) and a wide range of margaritas, rum and tequila cocktails. One of the more interesting samplers is a tequila flight ($8-$16) of Silver (unaged), Reposado (aged for a year) and Anejo (aged more than a year) tequilas.

Los Cabos is open from 11 a.m. to 10 p.m. with the bar staying open until 2 a.m. Sutton says KC Hopps is also planning to add more restaurants in the near future.

"It's nice that we're able to keep hiring people in the current economy. We're working on two additional projects," he says.

The first time I ate there I thought I had died and gone to heaven. The shrimp and mushrooms in a creamy sauce, black beans and rice. Oh wow. Is was so good, I am going back tomorrow. Don't miss this delicious dish. I give it 5 stars out of 5.

I have been to Los Cabos 3 different times, and I have enjoyed myself every time. The drinks are fabulous and the patio is amazing.

Went with friends for a birthday celebration last night. The food was disgusting, the service was the worst any of us had ever experienced ever, so it was hard to enjoy the patio ( which is wonderful if they get around to seating you)

Our first time to Los Cabos was a couple of weeks ago because we heard Chris Foster would be playing there.

We love his music. We enjoyed our meal! We're looking forward to coming back for more of both Friday, April 30.

The patio might have a great view, but the 'smell' of your pollo out there may be a surprize.
