To whet your appetite for The Pitch's annual Best of Kansas City issue in October, we're counting down our favorite Top 50 dishes each weekday until October 7.
When the summer heat is as oppressive as it's been for the last week, who needs a heavy meal? Eating light is the right answer in any language, but at Cafe Provence in the Prairie Village Shopping Center, the perfect meal to counter the misery of the heat is salade de poulet -- but no ordinary chicken salad, no.
The light, flavorful salade de poulet on this cafe's lunch menu -- if you ask sweetly, chef Daniel Quillec will serve it at dinner, too -- is a pretty little tower constructed of cold chicken pieces lightly dressed in a silky, sassily seasoned curry cream and sliced cold red grapes and crunchy walnuts. This is topped with fresh green sprinkled with a tart vinaigrette and more walnuts. Eaten with a hunk of buttered baguette and a goblet of, say, a nicely chilled Sauvignon Blanc, it's a meal that's both comforting and light.
