Pastry chef Carter Holton: he sings, he bakes, he loves Lady Gaga

And for his next number...
​Until I met Carter Holton, I thought that chefs bursting spontaneously into song was something one saw only in an old movie musical, not real life.

Holton, 23, is the pastry chef for Le Fou Frog Restaurant. He also teaches at Art Institutes International -- Kansas City.



And he sings beautifully. Which brings us to the first of the seven questions we had for Carter.

 

 

 

FC: If you hadn't become a chef, what field would you have chosen?

Carter Holton: Definitely musical theater. I love to sing. There are nights at Le Fou Frog where the owner, Mano Rafael, makes me go out into the dining room and sing because the customers have requested it.

Weren't you working at Le Fou Frog before you went to culinary school at the Culinary Institute of America in Hyde Park?

Yes, I worked there while I was a senior in high school. In the kitchen. I knew I always wanted to be in the culinary field. I loved baking. It must be genetic -- my Mom bakes wedding cakes professionally.

What is your favorite dish to make at home?

A Reuben sandwich. I make my own homemade Thousand Island dressing.

And your favorite guilty pleasure food?

Potato chips. Kettle chips, actually. I like to eat them with French Valrhona chocolate. Oh, and my secret guilty pleasure? The maple-glazed long Johns sold at QuikTrip. I like to get them at 11 p.m., when they arrive at the stores, cold off the truck.

What is your area of expertise as a teacher?

Right now my focus is on breads. Over an 11-week semester I teach the students how to bake 144 different kinds of bread.

It sounds like you're working all the time.

I did take time off to attend the Lady Gaga concert at Sprint Center. She was incredible, and we had fabulous seats. One of the backup dancers gave me the finger. That was a highlight.

You've had your own celebrity moment this year. You competed on the Food Network Challenge on an episode that aired in July?

Yes, it was a wedding-cake challenge, but the wedding cakes had to be inspired by a paranormal event that each of the contestants had personally experirenced. I didn't win, but I created a tiered cake inspired by a haunted apartment that a friend of mine lived in.

Besides being a great instructor, he teaches with much passion...he often breaks out in song for us as well!!!!
