And to think, it all started 70 years ago...as a gas station.
In 1940, the original owners of Galvin's earned a little extra money by selling "chicken in a basket" to bus passengers traveling west to Kansas City (and beyond) on Highway 372. But over the past seven decades, Galvin's became a genteel, family-style restaurant serving platters of fried chicken, soup, salad, muffins, corn, green beans and freshly baked bread. Great home-made desserts, too.
The restaurant has stayed in the family all these years. Owner Bill Grace started working at Galvin's as a teenage busboy and dishwasher. The St. Joseph News-Press reported that the pastor of Bill Grace's church and family members were with Grace as firefighters put out the blaze.
