I didn't grow up going to the Salty Iguana (8228 Mission) in Prairie Village, but once I had a kid, it was only a matter of time before I ate there. It's the Fritz's Railroad of Mexican restaurants.
The Tacos Azul are crispy, blue-corn tacos stuffed with beef or chicken, and lettuce, cheese, tomato and onion. I ordered the chicken, which was shredded and tender. There's nothing complex about these tacos, but the echo of a taco night from my youth is a good thing. The tortillas were crispy and hot, giving each bite a good crunch. If you're searching for a bit more flavor, you might want to doctor the three tacos with hot sauce or a side of guacamole.
I've held on to a misguided belief that blue corn was code for a $5 bag of tortilla chips at Whole Foods. But a lightly fried taco has changed my perception. The Tacos Azul make me wonder just what else I've been missing in the blue-corn universe. A good blue-corn taco dinner suggests that there is a great dinner out there.
I know that Ponak's has blue-corn enchiladas, as does Panzon's in Lenexa. Where else can I find a proper blue-corn dish in town?

tostada's are always a-ok. we go w/kids on kids eat free. nothing earth shattering but decent, inexpensive "american" mexican. it's the taco or tostada for me. salsa's not spicy at all which is perfect for families.
These are certainly worth a mention but you should have got the beef though. And you missed the greater issue with corn: fucking monocultures.
