Chef Josh Eans, Part Three: The Daily Grind and his last burger meal

Chef Josh Eans is probably a little burger-ed out. He's had to eat a lot of them over the past month as part of a move to add a few new dishes to the Kansas City-area locations of Blanc Burgers + Bottles.

The gouda cheese fries from the happy hour menu will be a permanent menu addition. In addition to a new Chicken Caprese sandwich, Eans is adding the Daily Grind, a specialty burger that's similar to the brunch or weekend specials offered at Mission Farms that could change as often as two to three times a week.

"I just want to inject some freshness into what we're doing," Eans says.

Yesterday, he confessed his love for the pork tenderloin at Kitty's Cafe, while on Wednesday, we learned that life is better with hot sauce.

The dessert menu will be featuring fried pies from Dolce that will

change seasonally (strawberry rhubarb in April and peach this summer).

There will be a few new milkshake flavors -- strawberry and a Roasterie-coffee-flavored shake among them -- and not just vanilla and

chocolate going forward. And the beer list will be getting updated with

new options from Stone Brewery and Firestone Walker.

He's been busy envisioning the new menu, so Fat City decided to ask chef Eans what his last burger meal would be if he could pick his burger, fries and a drink. Here's what he would want:

I really enjoy our Kobe burger. So I'd want a nice, rich Kobe burger, medium rare. Doesn't have to be fancy, just good and juicy. It would be on a brioche bun with a really thick slice of bacon cooked crispy, and spicy wholegrain or Dijon mustard. And perfectly melted, slightly aged white cheddar.

A perfectly cooked order of french fries. They'd be thin, skinny cut with the skin on. And some really nice homemade ketchup and maybe a side of garlic aioli -- so you could switch between them with the fries.

As to a drink, it would have to be beer. I'd want to go with a really nice big American IPA. I really enjoy Founder's Red Rye PA or maybe Boulevard's Tank 7, even though it's not technically an IPA.
