Your first chance to sample the regional Mexican cuisine at Port Fonda likely won't be on the street but inside the retrofitted airstream trailer itself.
Chef and owner Patrick Ryan is taking reservations for El Comedor -- the one-table, six-person dining room inside his mobile food truck. And the last one available during the first weekend of reservations is on Saturday night, April 30, at 10:30 p.m. The airstream will be gleaming from the parking lot of the Rieger Hotel Grill & Exchange.
The menu for the table will be served family-style. Ryan will prepare a whole roasted pork shoulder that you can then turn into tacos with made-to-order corn tortillas, Rancho Gordo beans, guacamole, crema, chiles toreados, pickled vegetables, cabbage, radish, chopped onion and cilantro, and housemade salsas. Among the choices to drink will be Port Fonda agua verde. Dessert will be either churros con cajeta or tres leches cake.
"[We're] extremely excited to hit the street, and this is the perfect time of year to get started," Ryan says.
Back in January, Fat City talked to Ryan about his experiences working for chef Rick Bayless and his plans for the retrofitted airstream. The table, located on the trailer's hitch end is his innovative take on the chef's table. To snag the last reservation, e-mail him at patrick@portfondakc.com.
If you're too late, the Port Fonda truck will likely be rolling next month, and the entire crew will be orchestrating a June farm dinner at Green Dirt Farms.
