In honor of Earth Day, are any local restaurants composting food waste?

Just because we've yet to see a compost pile next to the traditional trash bin behind a restaurant doesn't mean the trend isn't catching on nationally: Yesterday, the Washington Post ran a story about restaurants in cities, such as Portsmouth, New Hampshire, turning their food waste over to companies that haul it away and compost it.

It's a terrific idea -- are any Kansas City restaurants composting their food waste? If so, let us know in the Comment section.
