What's the best thing to eat at a state fair or themed festival?

Right now is an interesting time to be your stomach. At the end of every summer, there is a cavalcade of state fairs and themed festivals — meaning your monthly intake of food on a stick goes up dramatically.

This weekend alone is the Kansas City Irish Festival, Santa-Cali-Gon Days and the start of the Kansas City Renaissance Festival. So is it turkey legs or fried dough that makes your world go round? What one festival/fair food makes your heart (literally) miss a beat or two?
