"We can't wait to open, but we want to continue to take care of our loyal customers at Pryde's," Knobel says.
It was last year around this time that the sisters and co-owners began to ardently look for a bigger space.
"We had done close to 300 pies, and we were up all night waiting for pies to bake in that one little oven," Knobel says.
The sisters will operate both the original space in Pryde's, as well as the new location in Overland Park, with one of them overseeing each of the retail operations. But this year, and going forward, the majority of the production will be done at the new shop (the deadline for Thanksgiving orders is Friday, November 18).
"We like that downtown Overland Park is coming alive again, and we wanted to be a part of that," Knobel says.
The bakery will have a mix of cutie pies (bite-sized treats), whole pies, as well as quiche and savory tarts. Knobel intends to have drip coffee and tea available, so people can sit down and enjoy a slice, as well. Right now, she points to the apple gorgonzola tart (apples baked with maple syrup, chopped walnuts and gorgonzola in a pastry baked until golden and then drizzled with a balsamic reduction) and the caramelized onion and Swiss cheese tart.
"The caramelized onion tart - you almost need a glass of wine to enjoy with that," Knobel says."Most of our tarts involve onions, apples or some combination of the two."
A bacon apple tart is also in the works, but it's the pies that have kept people coming to the Upper Crust. Knobel expects to always have fruit (like the harvest apple pie with apples, cranberries and a walnut crumble topping) and seasonal pies on hand, but recommends that folks order cream pies ahead of time.
"It's been a long journey. We're excited to expand the business after all these years and share the love. Pie is an item that has to be made with love," Knobel says.
The Upper Crust at 7943 Sante Fe Drive will be open from 10 a.m. to 5:30 p.m. Wednesday through Friday, and from 10 a.m. to 4 p.m. Saturday. The location in Pryde's will keep its current hours of 10 a.m. to 6 p.m. Friday and Saturday.
