What defunct KC restaurant or brand would you revive?

Brands never really die. They just sometimes need a makeover. At least, that's the premise of an article in The Wall Street Journal about the resurrection of Astro Pops and National Premium beer.

The trend piece looks at how a few savvy retailers are looking to capitalize on nostalgia and bring back something they believe should never have been lost to time. Let's play that game, here in Kansas City. If you had the capital and an idea of who exactly owned the rights to the thing, what defunct local restaurant or brand would you bring back for Kansas City and the world to enjoy?
