The Brett in Saison-Brett is Brettanomyces, a strain of yeast that imparts an earthy flavor during the three-month bottle-conditioning process. Boulevard brewer Jeremy Danner talked to KC Beer Blog about the "earthy, funky quality" of the Belgian-style farmhouse ale that is a cousin to Tank 7.
At 8.5 percent alcohol by volume, this beer is not as strong out of the bottle as several of the other Smokestack releases. It's dry with citrus notes from dry hopping with Amarillo hops. If you're pairing it with food, Pauwels recommends strong cheeses like cave-aged Gruyere and English Stilton, or foie gras or portobello mushrooms.
This is a limited release by Boulevard, so if you're interested, you should snag a bottle (or two, this is one of Boulevard's beers that gets better with age) in the next few days.
