The development agreement with KC Lodge Ventures LLC, which counts Paul Khoury (co-founder of PB&J restaurants), his son Patrick Khoury, and Tom Petersen among its partners, calls for three restaurants with an option for a fourth location in the Kansas City area. Twin Peaks is in the midst of a major expansion with plans to open 75 new locations over the next several years. Earlier this summer, the Associated Press wrote of the "brestaurant boom," wherein restaurants in the style of Hooters are one of the few restaurant segments actually growing.
