The first Pizza Bella opened in 2007 at 1810 Baltimore. Quillan Glynn, the original pizza chef, and his wife, Hilary, purchased the restaurant from Rob Dalzell in 2010. Back in 2011, Glynn sat down with Fat City (you can find that three-part interview here) to discuss his pizza philosophy and goal of making the shop a place where diners could be surprised by the toppings on a pie. His Brussels sprouts - roasted in the wood-fired pizza ovens with olive oil and salt - are the top-selling starters and a must for those who have never been to the restaurant.
