Grunauer's kraut juice cocktails get some love

Grunauer doesnt shy away from strong flavors.
Sauerkraut juice is no longer just for the septuagenarian set at Whole Foods. Grunauer's Wonder Bar, where cocktails range from classic to adventurous, is trying to bring the sexy back to kraut juice (if the sexy ever was in the brine).

The Splendid Table dives into Grunauer's use of pickle water, kraut juice and beet brine in an interview with bartender Scott Beskow. It's a chance to understand the Freight House restaurant's approach to earthy cocktails that never derail into the province of novelty drinks, and how the style of a cuisine (and its byproducts) are advancing the pickle-jar-to-martini-glass movement.
