This week's Drink This Now is a twofer: After chatting with Andrew Olsen last week about his new position as the bar manager at Bluestem, I knew I needed to go sample one of the Pimm's Cups he mentioned. (Well worth it. More on that after the jump.)

But Olsen, back behind the bar after a four-month dry spell as the assistant manager at Cleaver & Cork — work that took him "away from his craft," as he put its — Olsen was eager to experiment, and having just one of his cocktails seemed like gross negligence on my part.

Some people call Julie Ohno “the bitters girl,” but that has nothing to do with her disposition. When I meet her at Rye, the Leawood restaurant where she works, she greets me from behind the bar with a bright smile. She’s eager to talk about what’s really behind that nickname: the seemingly endless recipe book she’s assembling for her burgeoning company, No. 22 Bitters.

Drink This Now: 400 Rabbits of Drunkenness at Extra Virgin

Extra Virgin's bar manager, Berto Santoro, is not a scholar of Aztec folklore, but he doesn't believe that should stop him from finding inspiration in some of the ancient stories. When he was developing his most recent cocktail menu, there was one legend in particular that stood out to him: The fate of Mayahuel, the Aztec goddess of fertility, who is also associated with the agave plant. 

There is a mezcal drink on Santoro's menu called 400 Rabbits of Drunkenness - a mouthful of a title, but one that, he insists, is wholly essential.

Westport Millennial Weekend is happening this weekend in…Westport

The AC Hotel Westport, which opened in the former Q Hotel & Spa building in March, is a Marriott brand intent on wooing the Millennial set. Hence, it boasts various iPhone-friendly amenities — mobile check-in, bluetooth speakers in the rooms, free wifi throughout the hotel — and local and artisanal flourishes, like an espresso bar, Christopher Elbow chocolates for sale in the lobby store, and signature cocktails made from Dark Horse Distillery spirits. Corey Ringh, the hotel's marketing director, told me in March that his goal was for the AC to become a meaningful part of the social fabric of Westport. 

"We're hoping that we can be a place where people out in Westport — or people staying at the hotel — stop in for a drink, maybe have a small plate, move on," Ringh said. 

The hotel is making good on that aim this weekend. From Friday, May 15, through Sunday, May 17, AC Hotel will be “celebrating the spirit and vitality of Kansas City’s next generation of leaders by encouraging the Kansas City community to enjoy a weekend of pleasure and local entertainment in the historic Westport neighborhood.”

Parisi colors spring with lavender syrup and a certain tea

Going to Union Station can make me feel fancy, even when I am two months from my last haircut, am in public wearing cat socks and a Royals hoodie, and have almost definitely parked illegally. And I can double down on that snazzy feeling for about $5 when, once inside the depot, I order a lavender mocha at Parisi Café.

The drink, centered on bittersweet-chocolate ganache, is a sophisticated accompaniment to some high-quality people watching at the café’s tables in Union Station’s grand, ornate lobby. The mocha is gently sweetened with a touch of house-made lavender syrup, a flavor that will soon power Parisi’s purple-tinted lavender lemonade for another summer.

As you sip, the café’s ceramic mugs reveal a message: “Arte della tazza: art from the cup.” Indeed, except this is the kind of art you’ll want to appreciate by licking.
