This hotel bar is sophisticated yet unpretentious. The dim lighting and dark-wood interior make for the perfect setting to relax with close friends or even impress a date, and the bartenders know that a martini is made with gin unless otherwise specified. From fried calamari to elk burgers, the kitchen features a variety of enticing dishes. (The menu also includes less exotic buffalo wings or fish and chips.) Jazz artists such as Max Groove or Mark Montgomery entertain the weekend crowds. Theatergoers, young professionals and travelers in town on business make up much of the clientele. Everyone is welcome at 12 Baltimore, but you best tuck in that shirt -- this place is classy.

When downtown Kansas City’s historic Hotel Phillips was renovated a few years ago, the former sports bar on the eastern corner of the hostelry was re-born as 12 Baltimore, which is still a saloon but also serves breakfast, lunch and dinner during the week. The menu isn’t as snazzy or costly as the Phillips Chophouse downstairs, but offers a menu that’s both sophisticated (salad nicoise, shrimp quesadillas, sushi nachos) and comforting to the meat-and-potatoes set: a shaved prime-rib sandwich, crispy chicken chop salad, fish and chips, mini meat loafs. The kitchen staff doesn’t skimp on ingredients to create stylish versions of familiar fare. The burger is made with duck fat, the chicken wings are tossed in hot and sour tequila-lime sauce, and the macaroni and cheese uses spaetzle instead of macaroni. — Charles Ferruzza
