Maybe if other BBQ joints offered something news worthy we'd hear about them. Alas, all I hear is crickets. Way to go OK Joe's for continuing to look for and push the edges of that BBQ envelope.

I'm on the fence about this.  Two of my favorite restaurants have had run-ins with the Health Inspectors (I'm talking to you Gojo's and LC's BBQ) ... but it did not stop me from returning as soon as they were back in the good graces of the inspectors.  But there is something to be said for pride of ownership and maintaing quality as your business ages.  Ultimately though, it has very little effect on me if I already have a long-standing relationship with the business.

At what point did I say I cook to a color? By cooking to a medium rare to medium temperature, you will leave the appropriate amount of pink in the very center of the burger, yet will have eliminated e.coli issues ... especially if the meat is handled correctly before hand. I'm just saying it's very hard to cook such a burger when only dealing with 1/4 lb of beef.
