Re: “Is there a vegetarian equivalent to the ground-beef hard-shell taco?

Textured Vegetable Protein (TVP) or Textured Soy Protein (TSP) both found in the organic section of any grocery store would make a fine crumbled taco meat substitute. It comes dry in the bag, rehydrate with tomato sauce, beer or vegetable broth and add your favorite taco seasonings, and done. Look like a duck . . .quacks like a duck . . .but tastes like a taco.

Re: “On "Meatless in the Midwest," vegetarians have an issue with perception as much as meat

The only relevant thing that A.G. says in his essay, that speaks directly to Bender's point, is this: "And finally, it is important to not forget that hunger is the price a picky eater must be willing to pay without becoming insufferable." When you choose to eat differently from others, you must recognize that is your choice, and your responsibility to explain, to have patience around, to understand and to forgive and finally to figure out the work-arounds. The rest of the world doesn't own the rules or restrictions that your dietary choices require. You do. Each vegetarian & vegan chooses to eat a little differently, there are endless combinations. So, I say be vegetarian or vegan. I know I never met a vegetable I didn't like. Just know that you own all of the responsibilities that comes with that choice, we don't.

Re: “Bun meat headed to Independence: Up Dogs coming (sort of) soon

Hi Charles, so wasn't that the spot where Ophelia's Bakery was operating? Did they decide to not move forward with Ophelia's Bakery and have they changed it to this Hot Dog place? I wonder?

Re: “Opening Soon: Matchstick BBQ

Foodie says two thumbs up for Matchstick. The Tommy Gun sandwich I had for lunch features 1 lbs. of beef brisket tucked in between three slices of soft texas toast. It really hit the spot when I was craving a bunch o' brisket. I was also impressed that the fries were hand cut.

DO NOT miss out on the homemade ice cream they make every week. The flavors change often but they are all made with real cream . . .I enjoyed the lime kiwi ice cream immensely.

Manager, Seth Morris and Pitmaster, Tommy Treccariche along with partner Brett Conner are all doing a bang-up job at Matchstick.

Service is not where it needs to be, but they appear to be working on the issue.

I cannot wait to get in there to try their breakfast.
