I moved to KC from NYC a few months ago and was surprised at how spread out all the restaurants were and how little development there was in any given metro area. If people can walk from their neighborhood, then they are more likely to dine out or order in. The P & L is a small but growing version of what it should be like between restaurants and bars, but lets just say that people most definitely will pay for quality. Maybe not as often in this poor economy, but its a matter of being creative with your marketing and giving people more reasons to come to your restaurant than just to sit and eat. I'm not talking about tacky coupons either. Live entertainment, new and special or seasonal food favorites etc... Great article btw.
