You're too far south and west for really good tenderloins. In a band from Central Indiana to Central Iowa, they make the best ones. The best pork is part of it, plus hand pounding the tenderloins and then dipping then in a nicely seasoned beer batter and frying to perfection. In Central Illinois, they also make a 'horeshoe' from these. It's two pieces of toast, with a beer battered fried tenderloin on top, then a load of hot enough to boil spit fries, and topped with a white cheddar cheese sauce with a slight whang of beer.
