      <![CDATA[Dan-<br>Blanching, while seemingly unimportant and arduous, preserves the color, preserves the nutrients, and enhances the flavor of your vegetables. This is done by properly bringing the vegetable up to temperature, converting some starches to sugars and slightly softening the texture- then halting the cooking process with the ice bath.

      <![CDATA[I look forward to hearing more about this adventure you've embarked on. My husband is a chef in town (he's the morning lead at a local country club, but used to be an assistant chef/manager at Blue Moose in PV for 2 years prior), and has never been to culinary school, but would LOVE to go.
