In addition to Westport Cafe and Manifesto, you could get almost any of those drinks made well at: Harrys, Westside Local, M&S Grill, Grunauer, R Bar, The Majestic, and Firefly just off the top of my head.  The number of places offering those drinks greatly exceeds the demand.  There are not enough people out on any given night who know what an Aviation is to fill the places that serve them.  KC has a plethora of great bartenders and great bar menus.  I just don't think they will be sustainable once everyone discovers the next trend to come along

I took a bunch of friends to Westport Cafe this weekend and introduced them to some fantastic drinks from the turn of the 20th century (Aviations, Corpse Revivers, Last Words, Ward 8s, etc).  There are only a couple of places in town capable of making drinks like the Aviation due to the ingredients required.  We need some more establishments with good menus and good bartenders.

Things like this can work for a couple of years, but if you look at the places that have lasted generations they are the places where most anyone can feel comfortable.  It is why someplace like Buzzard's or Kelly's will always be a strong bet to outlast their neighbors.
