Thomas Keller's Bouchon locations use frozen Sysco fries and serve a product that on a handful of KC restaurants could compete with because they don't screw up.

skinny fries like the ones at Freddies, they get real crisp and crunchy without needing to be fried twice. Then again, back in the day, at the original Arthur Bryants you got extra flavor with your fries because they picked them up out of the warming tray with their bare hands.......probably a code violation but it truly was "local flavor".

"Hand-cut" basically implies that the fries are not processed, pre-cut frozen fries from a sysco bag. Assuming they are cooked properly, hand-cut fries have a far superior texture and more potato flavor than most frozen fries.
