You have to love a bakery where the owner — in this case, 28-year-old Erin Brown — has a résumé that starts with a pan of cookies when she was 7. Brown knew what her career would be from that first batch. She went on to graduate from Johnson County Community College's hospitality program. And in 2007, Brown opened her own bake shop, Dolce Baking Company, where she specializes in scones, brioche, cakes, cookies and cinnamon rolls (for autumn, she has added fresh chopped apples and a drizzle of apple-cider reduction to those family-recipe rolls). For the holidays, she predicts another best-selling season for her cranberry-orange roll. "I add lots of fall items to my menu," says Brown, who starts baking at 4 a.m. This season's choices include sticky toffee pudding, soft ginger-spice cookies and sweet-potato scones.
