It's been more than a century since the service industry truly flourished in the West Bottoms, but the R Bar and Restaurant promises to restore cool and class to the stockyards. The former Sutera's restaurant is now a seductive saloon, with exposed brick walls and a 37-foot bar made of antique doors. Behind the bar most nights is legendary bartender Sean Moriarty (formerly of City Tavern), who stirs up old favorites with a twist: the vesper (vodka, gin and Lillet Blonde), say, or the caipirinha (cachaca, fresh lime juice, sugar and muddled mint). Then there's the new stuff: corpse reviver No. 2 (Plymouth gin, Cointreau, Lillet Blonde and a drop of absinthe) and the Japanese slipper (Midori, Cointreau and fresh lemon juice). In the shadow of the American Royal, the R practically oozes sexiness.
