Arturo Cabral sells a lot of guacamole at El Patrón, his congenial saloon and restaurant on Southwest Boulevard. It's a simple concoction here: fresh avocados blended together with a spoonful or two of the house pico de gallo (chopped tomatoes, onion and fresh cilantro) until it's creamy enough — but not too thick — for dipping a fried tortilla chip. If the guacamole isn't perfect, Cabral's mamacita, the unflappable Stella, has been known to take it off the table and bring back a fresh bowl. And as fans of this cantina know, mother always knows best.
