It turns out that the new polar bears at the Kansas City Zoo are not the coolest thing in town. That honor belongs to chocolatier Christopher Elbow's new ice-cream shop, Glacé. A line out the door materialized the moment this modern, ice-blue space opened in May — and for good reason: the 18 brilliantly conceived and executed ice-cream and sorbet flavors. Elbow's skill is in creating ice cream that isolates and heightens the essence of the ingredients. The pineapple-cilantro sorbet tickles your tongue with the sweet fruit but ends with the herb's tangy punch. Almost as enjoyable as the dessert itself is watching fellow Glacé eaters ponder with a pause, after each complex spoonful, how Elbow has managed to layer tastes so seamlessly. "I want the ice cream to be something you eat and then want to eat again," he says. Mission accomplished.
