Any number of Kansas City restaurants boast one or two servers who stand out from the rest of the staff as stars because their work is so polished and professional, they transform a simple dinner into a memorable experience. At the Rieger Hotel Grill & Exchange, the serving staff is like the ensemble of a Broadway musical: Each server has his or her own style and personality, but they all work seamlessly together. "We didn't have a formal training program, really," co-owner Ryan Maybee says, "but we're lucky enough to have an assistant manager, Leslie Newsam, from the Danny Meyers restaurant, the Modern, in New York." Newsam's attentiveness and graciousness have set the tone for the rest of the company. "We just wanted a high level of knowledge, previous experience and personality," Maybee says. And that's exactly what the Rieger has.
