Chef Mano Rafael is preparing a seven-course meal, French Christmas-style. Look at this menu:
Quail eggs stuffed with caviar,
Brandade du Morue-salt codfish whipped with garlic, olive oil and potatoes,
Gambas Amoricaine-Colossial shrimp marinated in garlic, olive oil, fresh herbs and grilled, served with a Sauce Amoricaine-Lobster stock, Cognac and cream,
Gigot du Boeuf, organic, grass-fed Missouri beef seasoned with garlic and fresh herbs rolled and then seared on the outside and finished in the oven served with a red wine reduction sauce.
Dinner also includes the traditional "13" desserts with fresh fruit, nuts, fruit paste, nougatine and the Buche de Noel.
The price for the meal is $75 per person. Wine pairings can be added for $25.
