It's almost Pavlovian the way just a couple of notes from Louisiana zydeco masters Chubby Carrier and the Bayou Swamp Band can instantly make mouths salivate with desire for delicious, spicy food. Chubby's father, Roy Carrier Sr., of Roy Carrier and the Night Rockers, taught his son to play the accordion when Chubby was barely in his teens, much as Roy's own father had taught him. Soon, Chubby was playing drums in his father's band, taking over on accordion when Roy had to head off to work on an oil rig. In 1986, Chubby started playing washboard with Terrence Simien and the Mallet Playboys. Three years later, he put together his own band. With a blend of zydeco that's been specially prepared for maximum kick on the dance floor, Chubby Carrier and the Bayou Swamp Band have traveled from festival to club to festival ever since, spending most of the year on the road because the party can't stop. Cajun restaurants would be advised to start taking reservations for the nights that Chubby Carrier is in town, because the crave will be in full effect.
