This unassuming Mexican joint hasnt changed much since it opened 35 years ago. Behind the steam table, a speedy kitchen crew whips up tacos, enchiladas and six different burritos, splashing them with one of four sauces and popping them into shiny microwave ovens. Don Chilitos is Tex-Mex. Tex-Mex is not authentic. The point of Tex-Mex is to layer as much unhealthy stuff on a tortilla as possible (queso, sour cream, carnitas), and then add some zing with a mountain of unlimited tomato salsa. If you want authentic Mexican food, go to Western KS.

I do not understand why this place is seemingly always crowded! There is a HyVee market within walking distance where you can get the same food and nuke it yourself in your own microwave! I know it is in Kansas, but I cannot possibly believe that Kansans really think the food here is even remotely similar to traditional mexican cuisine.
