In a metropolitan area with so many fine independently owned Mexican restaurants, its hard to find a chain operation that lives up to the same standards. To its credit, Dallas-based Brinker International (Chilis, Macaroni Grill) doesnt dumb down the Tex-Mex cuisine at its On the Border restaurants. What makes On the Border particularly appealing to many Midwestern diners is the chains enthusiasm for Americanizing even popular Tex-Mex dishes, like the surprisingly good beef brisket tacos with fried onions, spicy buffalo chicken tacos (with crumbled blue cheese!), dulce de leche cheesecake and Kahlua ice-cream pie.
