Paradise Locker Meats

Paradise Locker Meats in Trimble, Missouri, is at the center of the rebirth of the local butcher. The Pitch accompanied chefs from both coasts and the staff of Heritage Foods USA, which takes weekly mail-orders for the Heritage pigs that Paradise Locker slaughters and process, on a tour of the Missouri butcher at the end of March 2013. Open since 1945, Paradise has been owned and operated by the Fantasma family for the past 18 years. Photos by Brooke Vandever.
