One of the Plazas busiest chain restaurants, the Arizona-based P.F. Changs has cleverly co-opted traditional Chinese cuisine by offering it in a glamorous setting (more like a stylish 1940s nightclub than the stereotypical Chinese restaurant) with contemporary pop music, a sophisticated wine list and attractive young servers. The food — even the so-called Szechwan-inspired dishes — isnt terribly spicy, and it all comes out of the kitchen so glossy, youd think it was coated with shellac instead of barbecue or lemon sauce. Still, the fare is tasty, beautifully presented and sometimes downright revolutionary, like the wok-seared tofu or chicken concoctions that customers wrap in curls of cold iceberg lettuce. — Charles Ferruzza
