Ra Sushi is as polished and smooth as a moonstone and does for sashimi and sushi rolls what a rival chain, P.F. Changs, does for Hunan pork and Mandarin chicken: The dishes become seriously less ethnic, more of an experience than a meal. The servers all speak perfect English, and the restaurant is enclosed by a dark, loud and sexy nightclub. The ambience may drive some people crazy - even at lunch, its difficult to have an intimate conversation - but its hard not to like Ra Sushi. The place runs like a dream: The food arrives in minutes because this restaurants kitchen crew arrives early and preps the food with the precision of a state-of-the-art industrial factory. Dumplings are ready in a flash, which may be the operative word because many dishes are flash-fried: gyoza dumplings and squares of tofu; tempura shrimp; and even the most flamboyant of the sushi rolls, the Viva Las Vegas.
