Kansas City’s a meat-loving metropolis, famous for its barbecue, steakhouses and fried chicken restaurants. It hasn’t always embraced vegetarian restaurants, but entrepreneurs such as Café Seed’s Ericka Mingo keep making a case for a meatless lifestyle. Mingo’s tiny restaurant is a vegan operation -- that means no meat, no eggs, no dairy, no honey. And the service is kind of slow. What Café Seed does have is excellent weekend breakfasts and dinners – lunch is served Tuesday-Friday – that can win over meat lovers with tasty vegetarian versions of tacos, sandwiches and burgers. The salads and desserts are very fine, too. Even if you eat too much here, you’ll feel healthy.
