After the current owners of the venerable Raphael Hotel updated the public and guest rooms of the city’s first boutique hotel, it seemed like a good decision to turn the dark, cozy – but undeniably stodgy -- Raphael dining room into a place that might be more alluring to a younger demographic. Chaz on the Plaza updates the décor from the 1940s to the 1960s! If it had been done with a sense of humor, there might be more joie de vivre here. Nonetheless, chef Peter Hahn puts a Kansas City spin on the classic French cassoulet, with duck confit and bits of wonderful buffalo sausage mixed in with the slow-simmered white beans, roasted tomatoes, and grilled asparagus. For other dishes, he pan-browns huge scallops in olive oil with garlic, piquillo peppers and white wine, or simmers free-range chicken in olive oil with preserved lemon and olives. A side order of mashed potatoes whipped up with creamy, garlicky Boursin cheese and fat chunks of lobster could serve as dinner, while a chilled, bittersweet Marquis au Chocolat is a nice finale to an expensive but satisfying meal. - Charles Ferruzza
