This comfortable, intimate restaurant with the “trulli-style” wood-burning oven was the dream of restaurateur Joe Avelluto, who was determined to bring the distinctive dishes of his native Apulian region of Italy to this suburban Kansas trattoria. Joe’s son, Joseph Avelluto Jr., now oversees the restaurant, and executive chef Sean Price focuses on seasonal dishes using regional products. Price’s wife, Ashley Foy Price, is the pastry chef, and Alex Conejo continues to make fresh pastas, as he’s done here for more than a decade. Adventurous diners don’t even have to look at the menu — they can try a “tasting dinner” in which servers bring out a series of dishes, from starter to dessert. This concept, which can run from $35 to $50 a person (without liquor or gratuity), is an exciting way to taste new dishes without a culinary compass. - Charles Ferruzza
