Honduras-born Fredy Rios has turned a decrepit former fast-food joint on Independence Avenue into a tidy and comfortable place to sample popular dishes from the Central American countries — Guatemala, El Salvador, Costa Rica, Honduras — that are often unfamiliar to Midwestern palates. Sure, the kitchen sells tamales, burritos and tacos, but the real treats are pupusas (tortillas folded around different fillings, including cheese and chopped loroco buds), meaty fried pork skins called chicharrones, seafood soups, fried yuca, sautéed sweet plantains and a fried pork chop known as chuleta. Customers can order at the counter or at one of the booths in the little dining room, but be warned: The servers may only speak un poco InglÛs.
